ImagingUSA day 2 is over and may I say, why am I still awake?? I was planning on sleeping around 6pm as expo and classes ended at 5pm, hmmm not sure what happened there. Oh yes I know, I was going through all the brochures and things I have collected at the expo!!! Stumbled upon some amazing finds, things I may have never found if not for PPA, ImagingUSA and all their sponsors that make this happen. Thank you all 🙂 So yes, going through all this stuff is a good thing, I am excited to find new labs and new products to introduce, this is great! However excited I am however, I still am pretty exhausted, more mentally than anything. It doesn’t help that my notebook is open and every 5 min I stop what I’m doing to get whatever idea is in my head on paper. I am thrilled that my brain is that active and on top of things, I just could have gone to bed earlier if I wasn’t so inspired. 🙂
Lots of inspiration today came from the amazing speakers, a big, big, HUGE Thank You to Jeff & Allison Rodgers and Todd & Jamie Reichman!!!!!! Be prepared guys I will be emailing questions as I start to really really understand and work with all the knowledge you have provided me with today. Check these folks out! Truly genuine super helpful people. I can’t express how happy I am that I chose to go to these two classes! No really, I’d probably do a better job if my eyes weren’t half closed 🙂
Did I mention that the first day of imaging there were 10,000 people in attendance!!!!! A record high I believe, guess I picked a good year to join and attend!
Last day of all this greatness tomorrow, I must salvage all the sleep I can so I am on my game. But yes, the notebook of ideas will be bedside.

A trip to San Antonio is not complete without at least one meal on Authentic Tex-Mex… and nothing typifies that cuisine quite like the puffy taco. Not exactly the healthiest dish around, and it will send vegetarians away screaming, but what is not to love about a puffy deep-fried taco shell, seasoned meat, cheese and tomatoes; add a little Cholula and you’re good to go!
When I was in San Antonio I went to La Jalisco at 130 E Main Plz, San Antonio, TX… definitely not for the faint of heart or for people who like to stick to the trail… La Jalisco is very authentic (at least from a Gringo perspective) but it seemed to be family owned and operated and it helps to speak a little Spanish to order (don’t let this deter you at all!). While the building looked less then desirable from the outside (and parts of the inside) what great Mexican restaurant doesn’t look a little shady on the outside. The food is good and the service, while not four-star, was quite a delight and they did their best to serve us (there were 12 of us when I went)!
My recommendations: Puffy Tacos washed down with a glass of icy Horchata (rice milk with cinnamon, its delicious!).
